Turkish Tavern Culture at Borough Market: Kismet Opens Its Doors in London
Located in the significant gastronomic world of London, Borough Market hosts a new restaurant concept inspired by Turkish cuisine. Kismet, which opened its doors on the upper floor of The Globe Tavern, will welcome guests for approximately a year with its menu that combines the Istanbul tavern culture with Northern Cyprus cuisine and a sharing-focused service approach.
The project, brought to life by Dom Hamdy, the founder of Bistro Freddie, and Keiran Mustafa, who previously managed the kitchen of the Michelin-starred Bibi, will operate under the "guest restaurant" model. Kismet replaces the Cambodian concept Baran, which previously operated at the same address.
Tavern culture is moving to London’s gastronomic center
Kismet’s kitchen reinterprets the sharing culture of classic Turkish taverns with a contemporary restaurant understanding.
The menu includes appetizers such as atom, olive oil green beans, stuffed meatballs, and liver wrapped in grape leaves, as well as main dishes like lamb skewers cooked over charcoal. Guests can either order à la carte or opt for a fixed menu.
The concept is not limited to the kitchen. Weekly live music programs and the "regulars' bottle" practice seen in traditional taverns are also important parts of the dining experience.
A restaurant story nourished by roots
Growing up in a Turkish Cypriot family, Keiran Mustafa places the sharing culture from his childhood at the center of the project.
According to Mustafa, a tavern is not just a place to eat; it represents a social way of life where people come together, engage in long conversations, and hospitality is emphasized. The restaurant's concept aims to bring this cultural approach to London’s multicultural gastronomic scene.
The residency model stands out
One of the most striking aspects of Kismet is its operation under the residency model.
This model, which has become widespread in London in recent years, allows new restaurant concepts to test the market for a certain period without incurring high investment costs. Thus, entrepreneurs can both build brand awareness and have the opportunity to develop their concepts.
An international showcase for Turkish cuisine
Being located in one of the world’s most recognized gastronomic destinations like Borough Market is also significant for the international visibility of Turkish cuisine.
In recent years, the number of restaurants in London that highlight not only kebabs or street flavors but also regional cuisines of Anatolia, the sharing culture, and traditional service understanding is increasing. Kismet stands out as one of the new examples of this transformation.
What does it mean for businesses?
For restaurants aiming to succeed in the international market, Kismet attracts attention not only with its menu but also with its story, cultural identity, and experience-oriented business approach.
Sharing tables, live music, long dinners, and tavern rituals show that restaurants can transform from mere food-serving businesses into experience-oriented brands.
Stafflink’s View
The international success of Turkish cuisine is now measured not only by product diversity but also by how accurately it conveys its cultural story. Kismet, which opened in a globally significant gastronomic center like Borough Market, creates one of the remarkable examples of this transformation by combining tavern culture with modern restaurant management.
In our view, especially the sharing culture, regional culinary identity, and experience-oriented service approach offer an important differentiation opportunity for Turkish restaurants aiming to operate abroad.
