José Andrés' Two Las Vegas Restaurants Awarded Michelin
The return of the Michelin Guide to Las Vegas after a 17-year hiatus brought awards to José Andrés Group for two different culinary models in the same city. é by José Andrés received one Michelin star, while China Poblano received Bib Gourmand. The results were announced at the first Michelin Guide Southwest ceremony held on August 26, 2026, at Fontainebleau Las Vegas.
The new Southwest selection by Michelin covers Arizona, Nevada, New Mexico, and Utah. A total of 64 restaurants representing 24 different types of cuisine were included in the first selection. Las Vegas was represented by a total of 24 restaurants across star, Bib Gourmand, and recommended categories.
What is notable for José Andrés Group is not just that two restaurants received awards. The two establishments are recognized for their significantly different models in terms of service style, price positioning, and customer experience.
é by José Andrés: A Star for a Nine-Seat Experience
é by José Andrés is a very small tasting menu restaurant located within The Cosmopolitan. MGM Resorts describes the venue as an experience based on Spanish avant-garde cuisine, centered around a nine-seat chef's counter. Michelin also awarded the restaurant one star in the 2026 Southwest selection.
In the Michelin system, one star represents high-quality cuisine. However, in the case of é, the award should not only be interpreted through the technical quality on the plate.
The nine-seat capacity nearly eliminates the distance between service, kitchen, and guest. The meal transforms into a more theatrical and direct experience than the classic tasting menu with sequential courses.
The advantage of this format from an operational perspective is its ability to produce a highly controlled service. The chef team knows at which stage each guest is; plate outputs can be synchronized, and the presentation can be delivered at the same standard.
However, the extremely low capacity also differentiates the economic model. In such a restaurant, revenue per seat, reservation management, and no-show policies become critical. Even a single empty seat represents a significant portion of total capacity.
China Poblano Achieved the Same Success in a Different Price Segment
The second award for José Andrés Group went to a completely different model.
China Poblano brings together Chinese and Mexican cuisines within the same restaurant. The menu features Mexican dishes like tacos and guacamole alongside dim sum and various preparations from Chinese cuisine. The restaurant was included in the Bib Gourmand category by Michelin.
Bib Gourmand is an accolade given by Michelin to establishments that offer good quality at more accessible prices. Michelin positions the category in its definition as "good quality, good price-value balance."
Therefore, it is not correct to evaluate é and China Poblano based on the same performance criteria.
One is a nine-seat, highly controlled tasting experience. The other is a model that can reach a broader customer base, more suitable for sharing and daily restaurant use.
The recognition of both formats by the same group presents a more interesting outcome in terms of restaurant portfolio management.
Michelin Success is Not Limited to Fine Dining
When Michelin is mentioned, the first thing that often comes to mind in the industry is expensive tasting menu restaurants. Bib Gourmand shows that quality assessment can also occur at different price levels.
This distinction is particularly important for restaurant groups.
Instead of moving every new concept to the highest price segment, different economic models can be established according to various customer usage moments. While fine dining creates brand prestige and destination demand, more accessible restaurants can provide higher volume and repeat visit potential.
José Andrés Group's Las Vegas portfolio also demonstrates this diversity. In addition to é and China Poblano, the group has different concepts such as Jaleo, Bazaar Meat, Bazaar Mar, Bar Centro, and Zaytinya, which opened in 2026.
This structure is based on a strategy of creating a portfolio with different dining experiences within the same city rather than scaling a single restaurant.
The Value of Hotel-Restaurant Partnerships Becomes More Visible
The presence of é and China Poblano within The Cosmopolitan is also significant for the industry.
Las Vegas's restaurant economy is largely intertwined with resort and casino complexes. In the Michelin results, MGM Resorts' portfolio included Joël Robuchon with two stars, while L'Atelier de Joël Robuchon and é by José Andrés received one star each. China Poblano was also included in the Bib Gourmand selection. MGM announced that a total of six of its restaurants were recognized by Michelin in different categories.
In this model, the hotel and restaurant brand provide different values to each other.
The resort offers high visitor traffic, physical infrastructure, reservation demand, and international customer access. The chef or restaurant group can provide an independent gastronomic brand, media visibility, and an additional reason for visits to the property.
However, these partnerships should not only turn into the transfer of famous names. In external evaluations like Michelin, the determining factor for the result is not the brand name but the continuity of daily service.
José Andrés' Statement Highlighted the Importance of Staff
In his statement following the awards, José Andrés specifically mentioned not only the chefs but also the cooks, sommeliers, service staff, and dishwashing teams, emphasizing that the success was produced by the restaurant teams.
This emphasis well summarizes the operational reality of Michelin-level restaurants.
No matter how creative the recipe for the tasting menu is, if the service temperature is wrong or the plate rhythm is disrupted, the experience falters. Similarly, to maintain the price-value balance at the Bib Gourmand level, purchasing, portioning, and labor costs must be continuously managed.
The award is visibly given in the name of the restaurant; however, it is the team working every shift that maintains the standard.
A New Era for Las Vegas After 17 Years
The last time Michelin evaluated Las Vegas was during the 2008-2009 guides. The return of the guide with the Southwest edition means a reevaluation of the changes in Las Vegas's restaurant market over the past 17 years on an international scale.
The city has long been known for celebrity chef restaurants and large resort investments. However, the new selection shows that not only large hotel restaurants but also independent establishments of different scales and price segments are present, indicating that the market has transformed into a broader gastronomic ecosystem.
This situation is also changing the role of restaurants for hotels. Strong gastronomy is no longer just a side service offered to staying guests; it is one of the products that can directly create a reason to travel to the destination.
Stafflink's Perspective
In our view, the most instructive aspect of José Andrés Group's Las Vegas results is the coexistence of a Michelin star and Bib Gourmand within the same portfolio.
é operates as a special experience model with extremely low capacity and high service control. China Poblano, on the other hand, progresses through broader access, higher volume, and price-value balance.
The lesson for restaurant groups here is not to move all brands to the same price segment. Aligning the promised experience with price, operations, and staff competency for each concept is a more sustainable approach.
There is a similar issue for restaurants and hotels operating under Michelin in Istanbul, Izmir, and Mugla in Turkey. For businesses aiming for Michelin visibility, it is not enough to direct investments solely towards chef transfers or expensive products.
The system that ensures the sustainability of the award is established through the consistent operation of kitchen standards, service training, purchasing, reservation management, and team continuity at the same level every day.
