Denmark's world-famous restaurant Noma is making its long-awaited return on August 5. In the new era, daily kitchen operations will be managed by Pablo Soto, and the restaurant will operate with a menu model that changes every month instead of three seasons.

Noma Reopens on August 5 with a New Management Model and Monthly Menu Concept

Considered one of the most influential restaurants in the world of gastronomy, Noma is preparing to welcome guests again at its Copenhagen location on August 5 after a break of about six months. However, this reopening does not only mean the doors are opening again. The restaurant is entering a new era with notable changes in many areas of operations, from kitchen management to menu planning.

René Redzepi, who has been the creative force behind the restaurant for many years, will step back from daily kitchen operations while continuing in the role of creative director. The leadership of daily operations will be handed over to Executive Head Chef Pablo Soto, who has been part of the Noma team for a long time.

The menu will now be completely renewed every month

One of the most striking changes at Noma is occurring in the menu structure.

The service model, which was previously shaped around three main periods of seafood, vegetables, and game seasons, will now give way to a system where the menu changes completely every month.

According to the restaurant management, this model aims to make the production approach inspired by nature more flexible and to interpret seasonality in a much more dynamic way. Thus, product supply, harvest periods, and creative kitchen work can be planned in shorter cycles.

Operational responsibility has passed to Pablo Soto

In the new organizational structure, Pablo Soto will not only take over kitchen management; he will also be responsible for the development of team organization and work processes.

Soto stated that during the preparation process, the working systems were comprehensively reviewed and new practices aimed at strengthening team experience were implemented. He also mentioned that the first three months of reservations after the reopening are largely filled.

This statement shows that the restaurant maintains its global brand strength while also highlighting the high expectations for the new management model.

Will not be included in the Michelin Guide this year

Another noteworthy development regarding Noma's reopening is related to the Michelin Guide.

The restaurant was not included in this year's Michelin selection because it could not complete the necessary service duration for evaluation within 2026. This situation is not due to a quality assessment but stems from the guide's evaluation calendar.

A new era following the Los Angeles pop-up

The restaurant temporarily halted its operations in Copenhagen due to the pop-up project it conducted in Los Angeles in the first half of the year.

This process coincided with the period when René Redzepi announced his withdrawal from daily operations and a new leadership model was established in the organizational structure.

In the new structure, Redzepi focuses on creative vision while operational management has been distributed to a broader leadership team.

What does it mean for businesses?

Noma's move should not be seen merely as the reopening of a world-renowned restaurant.

The monthly renewing menu model requires much more agile management of purchasing, inventory management, recipe development, and team coordination. Such a system may not be sustainable without high operational discipline and strong supply planning.

On the other hand, the separation of the creative leader and the operational leader stands out as one of the remarkable examples of the professional management approach that has been seen more frequently in large-scale restaurants in recent years.

Stafflink's Opinion

In the fine dining world, success has often been associated with the personal vision of the founding chef for many years. Noma's new organizational model indicates a more corporate structure where creativity and operational management can be led by different leaders.

This approach can serve as an important example not only for large restaurants but also for independent businesses aiming for growth. Updating menus in shorter cycles will keep the guest experience vibrant while increasing the need for data-driven decision-making in purchasing and production planning.
